  • 1 cup raw pumpkin pieces for roasting
  • 1/2 tsp ground cinnamon for roasting pumpkin
  • 1 cup old-fashioned rolled oats for the porridge
  • 2 cups water for cooking oats
  • 1/2 cup pumpkin puree homemade or canned, after roasting
  • 1 tsp ground cinnamon added to the porridge
  • 1/4 tsp ground nutmeg optional, for flavor
  • 2 tbsp maple syrup or honey for sweetness
  • 1 pinch salt

Method
 

  1. Preheat your oven to 400°F (200°C). Spread the pumpkin pieces on a baking sheet, sprinkle with a teaspoon of cinnamon, and roast for about 25 minutes until tender and slightly caramelized. The aroma of roasting pumpkin and cinnamon will fill your kitchen.
  2. Transfer the roasted pumpkin to a bowl and let it cool slightly. Once cooled, use a fork or blender to mash or puree the pumpkin until smooth. Set aside the pumpkin puree.
  3. In a medium saucepan, bring two cups of water to a gentle boil. Add the oats, a pinch of salt, and a teaspoon of cinnamon. Stir well to combine.
  4. Reduce the heat to low and simmer the oats, stirring occasionally, for about 5-7 minutes until they start to thicken and become tender.
  5. Stir in the pumpkin puree and continue cooking on low heat for another 3-5 minutes, allowing the flavors to meld and the mixture to become creamy.
  6. Remove the saucepan from heat and stir in the maple syrup or honey for sweetness. Taste and adjust seasonings if needed.
  7. Scoop the pumpkin oatmeal into bowls, watching it’s a comforting, creamy consistency with a swirl of pumpkin and specks of cinnamon on top. Serve warm, garnished with toasted nuts or seeds if desired.
