Ingredients
  

  • 1 cup fresh lemon juice preferably freshly squeezed
  • 1 teaspoon lemon zest finely grated
  • 0.75 cup sugar syrup melted sugar mixed with water, optional vanilla or lime for variations
  • 1 cup vodka adjust to taste
  • 3 cups ice cubes crushed or whole
  • 1 drop pink food coloring optional, for vibrant color

Method
 

  1. Add the lemon juice, lemon zest, sugar syrup, vodka, and food coloring (if using) into your blender.
  2. Pour in the ice cubes, filling the blender almost to the top, creating a frosty mound.
  3. Secure the lid tightly and pulse the blender a few times to break up the ice, then blend on high until the mixture is smooth and slushy, about 30-45 seconds. You should see a vibrant pink, icy texture with small ice particles distributed evenly.
  4. Stop the blender and check the consistency; it should be thick and scoopable but not too icy or runny. Add more ice if necessary and pulse again until the right texture is achieved.
  5. Taste the slushie; if it’s too sour, add a bit more sugar syrup or a splash of water and blend briefly to incorporate.
  6. Pour the vibrant pink slushie into chilled glasses, garnishing with lemon slices or a twist of lemon zest if desired. Serve immediately to enjoy its icy freshness.

Notes

For extra flair, rim glasses with sugar or garnish with fresh mint. Adjust the vodka amount for a stronger or milder drink.
