Ingredients
  

  • 2 cups fresh pineapple chunks ripe and juicy
  • 1/4 cup honey or adjust to taste
  • a handful fresh mint leaves about 10 leaves, bruised
  • 1 tablespoon lemon juice freshly squeezed

  • popsicle molds or small containers

Method
 

  1. Place the pineapple chunks, honey, fresh mint leaves, and lemon juice into your blender.
  2. Blend until the mixture is smooth and fragrant, about 30 seconds. The pineapple should be fully puréed, and the mint oils released, filling your space with a fresh aroma.
  3. Pour the blended mixture through a fine sieve into a bowl, gently pressing with the back of a spoon to extract a silky, pulp-free liquid. This step ensures a smooth texture for your popsicles.
  4. Pour the strained liquid into your popsicle molds or small containers, filling each about 1/4 inch from the top to allow space for expansion.
  5. Insert popsicle sticks or covers into each mold, then place the molds in the freezer. Let them freeze for at least 4 hours or overnight until completely solid.
  6. To serve, run warm water over the outside of each mold for about 10 seconds to loosen the popsicles, then gently pull them out.

Notes

For extra flavor, add a squeeze of lime or a splash of rum for an adult version. Use ripe pineapple for the best sweetness and aroma. Store leftovers tightly wrapped for up to 2 months in the freezer.
