Mini Sandwich Bites

Mini sandwich bites are small, handheld snacks made by layering flavorful ingredients between slices of soft bread, often cut into rounds or squares. They combine textures like crispy bread, creamy spreads, and savory fillings, resulting in bite-sized treats that are visually appealing and endlessly adaptable. Perfect for parties or quick snacks, they are assembled with care and served fresh for maximum flavor.

Ingredients

  • 8 slices sliced sandwich bread preferably soft, fresh
  • 4 oz cream cheese herbed or plain
  • 2 tsp mustard optional
  • 4 oz thinly sliced deli meat ham or turkey
  • 2 oz cheese slices cheddar, Swiss, or your choice
  • 1 small cucumber thinly sliced
  • a few fresh herbs herbs chives, basil, or parsley, chopped
  • optional pickles, bacon, chutney for toppings

Equipment

  • Bread knife
  • Small spoon or spatula
  • Cookie cutter or small glass
  • Baking sheet with parchment

Method

  1. Start by trimming the crusts off the slices of bread to create a clean edge, then slice each piece into rounds or squares using a cookie cutter or small glass to ensure uniform mini bites.
  2. Lightly toast the bread pieces in a preheated oven at 180°C (356°F) for about 5 minutes until just golden and crispy, then let them cool slightly. This adds a delightful crunch and prevents sogginess.
  3. In a small bowl, mix the cream cheese with a teaspoon of mustard if using, until smooth and creamy. This will serve as your tasty spread to hold everything together.
  4. Spread a generous layer of the herbed cream cheese mixture onto each bread piece, covering the surface evenly. Use a small spatula or the back of a spoon for smooth spreading.
  5. Layer a slice of deli meat and a slice of cheese on top of each spread bread piece, pressing gently to help them adhere and form a compact bite.
  6. Place thin slices of cucumber on top of each assembled bite to add a fresh, crisp texture and bright flavor.
  7. Sprinkle chopped herbs over the assembled bites for a burst of flavor and a colorful finish.
  8. If desired, add small toppings like pickles, crispy bacon, or a dollop of chutney for extra flavor and texture contrast.
  9. Arrange the finished mini bites on a serving platter. They can be served immediately or refrigerated for up to 2 hours for a more melded flavor.
  10. Just before serving, you can give the bites a quick refresh by letting them sit at room temperature for 10 minutes if refrigerated, to restore softness and maximize flavor.

Notes

Feel free to customize fillings with your favorite ingredients or seasonal produce. Lightly toasting the bread enhances crunch, and assembling just before serving keeps the bites fresh and crisp.
